Georgia Blueberry Delight Cake

  • 1 package butter cake mix
  • 4 whole eggs
  • 1/2 cup oil
  • 1 (11 oz.) can mandrain oranges, undrained

Preheat oven to 350 degrees F.  Prepare three 9-inch round cake pans. (Oil lightly the bottom of pans and sprinkle with flour.)  Shake out excess flour.  Set pans aside.  Put all above ingredients in large mixer bowl.  Blend until moistened.  Scrape bowl and beaters.  Beat at medium speed for 3 minutes.  DO NOT OVER MIX.  Pour batter into the prepared pans.  Bake for 25 minutes.  Cool cake in pans on cooling rack at least 10 minutes.  Remove from pans and cool top side up on rack.

Georgia Blueberry Frosting

  • 1 (8 oz.) package of cream cheese
  • 1 cup 4X powdered sugar
  • 1 teaspoon vanilla
  • 1 (8 oz.) carton prepared whipped topping
  • Georgia blueberry foliage (garnish)
Directions:Mix cream cheese, sugar and vanilla into a cream. Fold in prepared whipped topping. Use this to frost layers of Georgia Blueberry Delight Cake. Generously sprinkle fresh, ripe Georgia blueberries on each layer.
