Georgia Blueberry Orange Bread

  • 2 tablespoons butter
  • 1/4 cup boiling water
  • 2/3 cup orange juice
  • 4 teaspoons orange rind
  • 1 egg
  • 1 cup sugar
  • 1 teaspoon baking powder
  • 2 cups all-purpose flour
  • 1 cup Georgia Blueberries
  • 1/2 teaspoon salt
  • 2 tablespoons honey

Preheat oven to 325 degrees F.  In a small pan, melt butter in boiling water. Add 1/2 cup orange juice and 3 teaspoons orange rind.  Beat egg with sugar until light and fluffy. Sift flour, baking powder, baking soda and salt.  Add dry ingredients to creamed egg mixture, alternately with the orange liquid.  Fold in Georgia blueberries.  Bake in a greased loaf pan for 1 hour and 10 minutes.  Turn out on rack to cool.  Mix 2 tablespoons orange juice, 1 teaspoon orange rind and 2 tablespoons honey. Spoon over hot loaf.  Let stand until cool.
