Georgia Blueberry Cobbler

  • 6 cups fresh or frozen Georgia blueberries
  • 1 1/2 cups all-purpose flour
  • 3 cups sugar, divided
  • 1 teaspoon baking powder
  • 1 1/2 sticks butter, softened
  • 1/2 teaspoon salt
  • 1/4 cup water
  • 2 tablespoons sugar
  • 3 eggs
  • 1/2 stick butter, melted
  • 1 teaspoon vanilla extract

Combine 1 1/2 cup sugar with water.  Stir over low heat until sugar is melted.  Pour over berries until berries are well coated. Pour into a well greased 9 x 12 inch baking dish.
Crust:  Cream butter and sugar. Add eggs one at
a time, beating well after each addition. 

Mix together flour, baking powder and salt.  Add to creamed mixture.  Add vanilla and mix
well.  Drop batter in large dollops over berry mixture. Spread carefully to cover berries. Melt 1/2 stick butter.  Drizzle over batter. Sprinkle with two tablespoons sugar.

Bake at 350 degrees for about 50 minutes or until a toothpick inserted in the center comes out clean. Serve warm plain or with vanilla ice cream.
